Ingredients

  • Onion, chopped β€” 2 tbsps
  • Red bell pepper β€” 1⁄4
  • Cherry tomatoes β€” 1⁄4 cup
  • Mushrooms β€” 1⁄4 cup
  • Olive oil β€” 1 tsp
  • Avocado β€” 1⁄4
  • Spinach tortilla β€” 1

Directions (12 min β€’ Easy)

  1. Produce Prep- Peel & chop the onion, slice the bell peppers, slice the cherry tomatoes, wipe clean then slice the mushrooms.
  2. Add olive oil to a pan over medium heat, add the onions, bell pepper slices, tomatoes, & mushrooms.
  3. SautΓ©, stirring frequently, until the vegetables have softened and browned slightly, about 5-7 minutes.
  4. Add the avocado to your wrap, followed by your veggie mixture. Wrap it all up & enjoy!
