Pizza night just got a wholesome little upgrade.
These crispy polenta pizzas are one of my favorite ways to create a quick, comforting meal that still feels fresh and nourishing. They're easy to customize with whatever veggies or toppings you have on hand, making them perfect for busy weeknights, family dinners, or even a fun lunch with the kids.
The crispy polenta base, rich tomato sauce, fresh basil, and melty vegan cheese come together in just minutes, proving that simple ingredients can be seriously delicious.
Ingredients

Makes: 1 serving
- ¼ polenta tube
- 1½ teaspoons olive oil
- 2 teaspoons Follow Your Heart Parmesan Shreds
- ½ cup tomato sauce
- 1 tablespoon fresh basil
- 1 tablespoon + 1 teaspoon Miyoko's Fresh VeganMozz
- ¼ teaspoon chili pepper flakes
Directions
Prep time: 20 minutes
Difficulty: Easy
- Preheat your oven to 500°F (260°C).
- Slice the polenta tube into even rounds and grate the vegan Parmesan.
- Heat half of the olive oil in a skillet over medium high heat. Pan fry the polenta rounds for 1 to 2 minutes on each side until lightly golden.
- Lightly coat a baking tray with the remaining olive oil and transfer the polenta rounds onto the tray.
- Top each round with tomato sauce, VeganMozz, Parmesan, fresh basil, chili pepper flakes, and any extra toppings you love.
- Bake for about 5 minutes, or until the cheese has melted and everything is heated through.
Serve warm and enjoy!
