What you'll need
2 Cups of Lentils
3 Carrots
A bunch of Celery
3 Persian Cucumbers
1 Bell Pepper
Half of a Red Onion
Half of a squeezed lemon
Fresh Dill
Fresh Cilantro
Fresh Chives
Olive Oil
Balsamic
Dijon Mustard
Garlic Powder
Salt

Directions
- Cook lentils and refrigerate until cooled.
- While lentils cool, chop all the vegetable and make salad dressing.
- To make salad dressing mix ⅓ cup of Olive Oil, ¼ cup of Balsamic, lemon juice, 2 tablespoons of Dijon Mustard, 1 teaspoon of Garlic Powder, 1 teaspoon of Salt, and ½ teaspoon of Pepper.
- Once lentils are cooled, mix all ingredients together.
