What you'll need

2 Cups of Lentils

3 Carrots

A bunch of Celery

3 Persian Cucumbers

1 Bell Pepper

Half of a Red Onion

Half of a squeezed lemon

Fresh Dill

Fresh Cilantro

Fresh Chives

Olive Oil

Balsamic

Dijon Mustard

Garlic Powder

Salt

Pepper

Directions

  1. Cook lentils and refrigerate until cooled.
  2. While lentils cool, chop all the vegetable and make salad dressing.
  3. To make salad dressing mix ⅓ cup of Olive Oil, ¼ cup of Balsamic, lemon juice, 2 tablespoons of Dijon Mustard, 1 teaspoon of Garlic Powder, 1 teaspoon of Salt, and ½ teaspoon of Pepper.
  4. Once lentils are cooled, mix all ingredients together.
