What you'll need
Part 1: The Feta
¾ cup almonds, softened
¾ cup raw cashews, softened
¼ cup refined coconut oil
2 tablespoons lemon juice
1 tablespoon white miso paste
1 tablespoon green olive brine
½ teaspoon salt
Part 2:
Juice from 1 lemon
⅓ cup olive oil
3 cups fresh grapes, plus more for a garnish
Directions
- Combine the feta ingredients. Add everything to a food processor. You can add some of the water that you soaked the nuts in, or oliv eoil if needed.
- Blend until smooth and sticky.
- Leave to chill.
- Put the grapes in an oven pan
- Drizzle with salt and olive oil.
- Put in the oven at 350 degreed for 40 minutes.
- Top your feta with the roasted grapes and enjoy with crackers!
- Drizzle with olive oil and top with mint.
