Ingredients
1 medium
1⁄4 Onion
1⁄4 Red bell pepper
1⁄4 cup Mushrooms
1⁄2 Tomato
1⁄4 Avocado
1 1⁄2 tsps Olive oil
2 pinches Turmeric
2 pinches Kala Namak (Black salt)
2 pinches Black pepper
1⁄2 block Extra firm tofu, drained (14 oz)
Directions (15 min • Easy)
Produce Prep
Peel and slice the onion, slice the bell pepper, wipe down then slice the mushrooms, slice the tomato, slice the avocado.
Cook the tofu
Add oil to a pan over medium heat, then crumble tofu into the pan. Add turmeric, kala namak (egg salt), and ground black pepper and stir to combine. Keep on low heat and stir occasionally to prevent sticking.
Cook the vegetables
In a separate pan, heat some more oil over medium heat. Add the sliced onions, peppers, and mushrooms and saute, stirring frequently, until they soften and brown, about 5 to 7 minutes.
Combine
Add the sauteed vegetables to the tofu pan and stir to combine. Adjust seasonings to your liking.
Serve
Serve with fresh sliced tomatoes and avocado. Enjoy.
